White Beans and Ground Turkey

The prefect prep meal for a busy week 

Here it is! My favorite way to make up a delicious, nutritious meal prep packed with fiber and protein. This recipe will last my family several meals throughout the week, or freeze half for meals later.

Modifications if you’d like to strike up a Mexican flare for tacos/burritos or throw into pasta with marinara sauce for an Italian dish.

Ingredients:

1 Package Navy Beans - Soak beans in water overnight before cooking

1 Can Rotel Tomatoes

1/4 cup olive oil

3.5 Cups chopped mixed onions, peppers and celery. (I add bell peppers, cilantro and Anaheim pepper if going Mexican, or basil and garlic if going for Italian)

1 pound ground turkey (can use ground chicken if preferred)

(Optional: 1 cup of black beans, soaked overnight, or add a can of black beans late in the slow cooked process. My preference if you’re going for south-of-the border flavor)

Brown turkey before adding 2 Tablespoons of Better than Boullion - I used one each of chicken stock and vegetable broth. Put all items in a crockpot or and slow cook for 6 – 8 hours with about an inch of water until it reached the consistency wanted..

1 cup serving has 22g of protein and 16g of fiber.  Enjoy!
